Our passion is working with bees and producing the finest honey bee related products available. We’re not into high volume production. We only sell our own locally-managed, raw honey and other honey bee related products. We harvest and extract honey and wax from our own hives in north Mississippi. We do not sell third-party or blended honey. That’s important in this global marketplace where honey adulteration has become common. We know where our honey was produced. We harvest and extract each frame ourselves.
What is raw honey? It is simply honey that is extracted directly from the comb without further processing. There is no micro-filtering of our honey, which we feel removes much of what makes honey delicious and nutritious. There is no heating of our honey, which may destroy many of honey’s beneficial ingredients such as the enzymes and pollen. You will see small bits of wax and pollen in the honey. This is normal, and to be expected.
Perhaps you’re interested in honey because your doctor recommends it to help fight seasonal allergies or simply as an alternative to artificial sweeteners. At Wildflower we offer high quality honey during two important honey extraction points.
The first honey extraction is performed in July. This is spring/summer honey and is typically a light, delicate tasting honey. It is quite simply delicious and everyone seems to love this honey. This is the honey to purchase if your doctor recommends honey for spring/summer allergies. It’s great as a sweetener in any drink, on cereal, yogurt, fruit… add this honey and it’s just plain better.
The second extraction is performed in October. This is a late summer/fall honey that is typically darker and more aromatic. This honey is bold; full of flavor and aroma. This honey is for those that enjoy a stronger flavor that is from the nectar of the goldenrod and other fall plants that bloom in late summer in north Mississippi. We do not blend this honey with summer honey to “cut” the strength. This is the honey for you if your doctor recommends local honey for fall allergies.
Because we never heat or pasteurize our honey it will crystallize more quickly than many commercial grade honeys. Crystallized honey is simply in a different state, but it is still as usable as when it was in a liquid state. In fact, honey has an indefinite shelf life if it is not contaminated from an outside source. If your honey crystallizes and you prefer liquid honey simply place the jar (glass only! plastic will deform) in low temp water (never over 110f degrees) and it will liquefy in a matter of hours.
